Sedlec má jméno podle své polohy v krajině
Ves
Sedlec leží na severním úpatí Hazmburku na Podsedickém potoce asi 3 km
jihovýchodně od Třebenic. Nachází se v nadmořské výšce 198 m
v jakémsi sedle, vytvořené vulkanickými návršími. Podle svého umístění
v krajině obec také s největší pravděpodobností dostala svůj název.
V blízkosti obce se na jihozápadní straně vypínají vrchy Malý Planík
(230m) a Velký Planík (278 m), nabízející nádherný pohled na České středohoří.
Středem obce protéká Podsedický potok. Původní struktura obce je vcelku
zachována, je to okrouhlice s protaženým výběžkem drobných chalupnických
usedlostí. Náves byla upravena v 80. letech 20. století, kdy byla
odstraněna kašna a vodní nádrž. V blízkosti obce se při polních pracích nalezl
počátkem 80. let 19. století kostrový hrob s dobře zachovalým bronzovým
mečem, který byl vystaven na národopisné výstavě roku 1895 v Praze.
První dochovaný písemný záznam o samotné vsi pochází
již z roku 1237, kdy se připomíná jakýsi Zpita ze Sedlce a jeho synové. Ve
druhé polovině 14. století ves získal rod Zajíců z Valdeka, kterému
náležela mimo jiné také ves Klapý s hradem a Libochovické panství,
s nímž Sedlec do budoucna sdílela své osudy. Obec zažila mnohé války, na
počátku 15. století to byly války husitské, pak třicetiletá válka i napoleonské
války na počátku 19. století. V roce 1833 bylo v Sedlci 47 domů
s 255 obyvateli a farou ves patřila k obci Klapý.
V roce 1781 došlo ke zrušení nevolnictví a
v roce 1848 ke zrušení roboty: obce se staly samostatnými samosprávními
jednotkami. Roku 1847 byla v Sedlci na návsi postavena kaple Anděla
Strážce, v 90. letech 20. století byla opravena a znovu vysvěcena.
V druhé polovině 19. století pak nastal velký všeobecný rozkvět, nejenom
po stránce ekonomické, ale také společenské a kulturní. Na venkově byl konec
století ve znamení zakládání nejrůznějších organizací, spolků a ochotnických
divadel. V roce 1900 žilo v obci 327 lidí. Situace se na venkově
podstatně změnila k horšímu po vypuknutí světové války, ani Sedlec nebyl
výjimkou. Nedlouho po vypuknutí války začali být na frontu odváděni také zdejší
muži. Smuteční oznámení na sebe nenechala dlouho čekat. Řada mužů se domů již
nikdy nevrátila, někteří se stali invalidy. Mužskou práci musely během války
zastávat ženy a děti. Situace se stále zhoršovala a ke konci války již lidé
nejednou zažili i na vesnici hlad. V roce 1918 válka skončila. Trvalo sice
ještě mnoho měsíců, než se vyřešily všechny problémy se zásobováním apod.,
život se přece ale pomalu zlepšoval.
V meziválečném období probíhal velký
hospodářský rozvoj, stavělo se (v
roce 1927 výklenková kaplička) a opravovalo, všude znovu panovala dobrá nálada.
V roce 1928 byl v Sedlci postaven vedle kaple Anděla Strážce pomník padlým
v první světové válce; je od sochaře J. Saice z Budyně. Nese desku se
16 jmény a nápisem: „Vlast volná je, to slyšte všichni v dáli, kteří jste
pro ni umírali.“ K roku 1930 je v obci uváděno celkem 63 zemědělských
usedlostí s výměrou 377 ha polností. Ve třicátých letech se v sousedním Německu dostali
k moci nacisté a mezi Čechy a Němci začalo narůstat napětí. Sudety byly
zabrány německými vojsky, druhá světová válka se nezadržitelně blížila. Za
války byli obyvatelé opět sužováni nedostatkem a strachem, museli snášet
nacistický teror a toužebně očekávali konec války.
Osvobození přišlo v květnu 1945 a všichni se
těšili ze svobody. Po krátkém období poklidného hospodaření však přišla
kolektivizace. V 50. letech bylo založeno JZD Sedlec, které bylo později
direktivně sloučeno s Klapým, Lkání, Chodovlicemi a Dlažkovicemi. Centrem
spojeného zemědělského družstva se stalo JZD Klapý. K 1. 7. 1985 došlo ke
sloučení obcí Klapý, Lkáň a Sedlec ve větší správní celek. Lkáň a Sedlec se
staly místními částmi obce Klapý. V roce 1991 se obec Sedlec na základě
požadavků občanů opět osamostatnila. Obecní úřad sídlí nyní v bývalé
budově školy postavené v roce 1893. V současnosti Sedlec čítá 94
popisných čísel, z nichž 21 je využívání jako rekreační chalupy. Trvalé
v obci žije na 182 obyvatel.
V komunálních volbách 2002 kandidovala v Sedlci 2 sdružení nezávislých kandidátů, SNK 1 (4 mandáty) a SNK 2 (3 mandáty). Starostou byl zvolen Milak Kafka, místostarostou Vladimír Hás. Obec Sedlec je ve správním obvodu obce s rozšířenou působností Lovosice, pověřeným obecním úřadem jsou Libochovice. K občanské vybavenosti patří kanalizace a vodovod. K dispozici je občanům knihovna s veřejným internetem, prodejna smíšeného zboží a pohostinství. Obec má s okolními městy autobusové spojení (trať Lovosice – Třebenice – Čížkovice – Vojničky – Děčany – Třebívlice) a nejbližší nádraží Českých drah je asi 2 km daleko v Úpohlavech. Poštou přísluší Sedlec do Třebívlic. V obci se připravuje výstavba rodinných domků. Středem obce vede turistická stezka po červené z hradu Košťálov přes Lucký mlýn na hrad Hazmburk a zámek Libochovice.
Mezi významné osobnosti Sedlce patří místní rodák,
kapitán československé armády Jiří Větvička, který prošel s generálem
Svobodou od Buzuluku přes Duklu na Slovensko, kde byl raněn. Po válce byl
jmenován plukovníkem a na penzi žil v Dubanech. Napsal zde vzpomínkovou
knihu „Válka začíná až zítra.“

Sulphite (Sulfite) Free Wine
It is impossible to make a sulfite-free wine, because wine yeast produces sulfur dioxide (SO2) during the fermentation process. However, you can reduce and control the amount of sulphites in your wine by how much / whether you use metabisulphite in your home winemaking.
It is true that metabisulphite is an effective and safe method of sterilising both your must and equipment, but if you don’t mind taking a little bit of risk you can make wine without it. Using boiling water to sterlise your equipment and must, whilst a bit more risky in terms of your wine getting an infection, may be a worthwhile trade-off in your opinion especially if you have a sensitivity to sulphites. You can also choose to rinse your equipment that has been sterlised with metabisulphite with cooled boiled water to reduce the amount of sulphites you are adding to your wine. Also, if you are planning on drinking your wine young, the alcohol in the wine will act as a preservative, negating the need to add metabisulphite throughout the winemaking process as a preservative.
Some people use chlorine bleach to sterlise their equipment rather than metabisulphite. Also some homebrew stores sell a pink powder as a sanitiser which is a chlorinated product. This is NOT recommended. Chlorine is quite a dangerous product to have around wine. With improper use and insufficient rinsing chlorine residue may get into the wine. If it does, it could easily be converted to trichloroanisole (TCA) the major chemical found in cork taint (mustiness). For this reason, chlorine is almost never used in wineries.
